Mumbai Style Vada Pav

I hope you all are doing well. Amid this lockdown, many of you must be missing the iconic Mumbai’s vada pav. I am sure it’s been almost three months since I last ate street side vada pav. What if I tell you the classic Maharashtrian batata vada recipe is just a child’s play? So today, I am sharing this recipe with you all. The rainy season is on its verge in India. This garma garam vadas would be a perfect combination with this ideal rainy weather. Let us start with the ingredients.

The process is divided into two sections

  • Aloo Batata Vada Recipe
  • Frying the Vadas

Ingredients

  • Aloo Batata Vada Recipe

Medium sized potatoes

Ginger garlic paste

Salt

Onions

Asafetida (Hing)

Turmeric

Chopped green chilies

Chopped coriander

  • Frying the Vadas

Gram flour

Water

Salt

Red chili powder

Process

  • Batata vada filling

Pressure cook potatoes upto 5-6 whistles.

Once this is done, insert a fork and check if the potatoes are evenly cooked.

If the fork slides easily, then your potatoes are done.

Let the potatoes cool down.

After this, peel and mash them.

Add salt and ginger garlic paste and mix them and keep the mixture aside for 5 minutes.

Heat oil in a pan and add chopped onions, ginger-garlic paste, asafetida, turmeric, chopped green chilies and saute till the raw smell fades.

Add the potato mixture and give it a good mix.

Your potatoes should be entirely covered with the rest of the ingredients.

Check for taste and add salt as per your preference.

Finally, add chopped coriander and mix everything.

Your batata vada filling is ready.

Make small circles of this filling.

  • Frying the Vadas

Take gram flour in a vessel and add water to create a medium consistency.

Mix the batter continuously while mixing to avoid the formation of lumps.

Add salt and red chili powder.

Heat oil in a pan to deep fry the vadas.

Dip the vadas into this mixture and deep fry them into the oil.

Keep frying until they turn golden brown.

Remove the vadas and place them on a paper towel to absorb the excess oil.

Your batata vada is ready.

Final assembling

Typical Maharashtrian batata vada is incomplete without lasun chutney (I will be sharing the chutney recipe soon)

Take two pavs and slice them into half and apply some lasun chutney on them.

Place the vadas between the pavs.

Your quick and easy Mumbai style vada pav is ready.
